Citrus Spiced Christmas Cookies

Mix honey, turbinado, egg, lemon juice, lemon and orange rind together. Sift flour, soda, cinnamon, cloves, allspice and nutmeg and combine sifted ingredients with mixture. Chill the dough for approximately 1 hour.

Use a spoon and drop about 1/2 tablespoon of cookie dough on a cookie sheet lined with parchment paper. These will spread out when baked. These cookies get a little sticky so the parchment paper will prevent them from sticking to the pan while cooking.

Bake at 400° F for 10 minutes for a softer cookie. For a crisper cookie, bake an additional 3 minutes.

Note: Turbinado sugar is often used as a substitute for brown sugar.
