Preheat oven to 350° F. Sift the flour, baking soda, baking powder, and salt together into a large mixing bowl. Mix in the fructose, oats, cherries and apricots. Stir in the oil, vanilla, and soy milk, mixing well. Take a heaping teaspoon and roll into a ball. Roll the ball into egg whites then roll in chopped walnuts. Place onto a non stick or parchment paper lined cookie sheet. Bake for 12 to 15 minutes, until just beginning to brown around the edges.
