Swanson Healthy Recipe Cranberry Yam Bread

Preheat oven to 350° F. Coat a 9x5x3 inch loaf pan with non-stick cooking spray and dust with flour. In a large bowl combine eggs, fructose, oil, yams and vanilla extract. In a separate bowl combine flour, cinnamon, allspice, and baking soda. Make a well in the center. Pour yam mixture into well and mix by hand until moistened. Stir in cranberries and walnuts. Spoon batter into prepared loaf pan. Bake 1 hour or until a toothpick in the center comes out clean.

Makes 1 loaf.
