Parmesan and Pepper Jack Chia Crackers

Combine all ingredients in a large bowl. Mix well and form into a dough ball.

Wrap dough in wax paper or plastic wrap, and refrigerate for 30 minutes. Remove the dough and let sit at room temperature for 10 minutes.

Preheat the oven to 325°F. Line two baking sheets with parchment paper.

Place dough ball between to pieces of parchment paper. Roll with a rolling pin until dough is about 1/8-inch thick.

Use a pizza or pastry cutter to cut into squares.

Use a spatula to move crackers to prepared baking sheets. Leave ½ inch between each cracker.

Bake 12-15 minutes, until brown and crispy.

Makes 4 servings. Serving size 12.0crackers.
