Spicy Paleo Pork Bites

Spicy Paleo Pork Bites

Preheat the oven to 375°F. Line two large baking sheets with foil. Set aside.

To toast coconut, heat in a large skillet over medium heat, stirring frequently, until lightly toasted. Remove from heat and mix in 1 teaspoon of cayenne pepper.

Drain pineapple, saving the juice. Press the pineapple in a sieve to remove the excess juice. Move the pineapple chunks to a large bowl.

Add the following to the bowl with the pineapple: remaining 1 tsp cayenne pepper, ginger, garlic, fiber powder, minced jalapenos, beaten eggs and pork. Mix well.

Prepare an assembly line of reserved pineapple juice, bowl of coconut milk and the pan of coconut. Form 1 Tbsp of pork into a ball and dip in pineapple juice and then coconut milk. Roll in the spiced coconut and place on prepared pan. Repeat.

Bake for 15 minutes. Remove from oven and let cool before enjoying.
