Bob's Red Mill Xanthan Gum is perfect for gluten-free baking. It is made from the outer layer of a tiny, inactive bacterium called Xanthomonas campestris. It is an excellent all-purpose thickener for dressings, gravies and sauces. Its unique ability to hold small particles of food together is what makes it the ideal substitute for gluten in gluten-free baking. Most recipes call for only 1 or 2 teaspoons, so this little bag will go a long way in your kitchen.

Good Ole Bob does it again Same quality I've come to expect from Bob's red mill. This is the first xanthan gum I've ever used, however it did the job for my gluten-free breads. I'm sensitive to guar gum, so hope to replace with xanthan. Just wish that the pricing could be equal to guar. April 18, 2013
