BASIC COOKING INSTRUCTIONS: For best results, soak 1 cup spelt in water overnight, then drain. Bring 3 cups water or stock to a boil in a pot. Add spelt; cover, reduce heat and simmer until grains are chewy, about 40-60 minutes. (65-80 minutes if grains were not soaked). Drain off any excess liquid. Makes 4 servings (about 2¼ cups).
