Amaranth has long been known as a staple food, dating as far back as the Aztecs who used it in religious rituals. This tiny grain--which is actually a seed--is a source of protein, magnesium iron and dietary fiber. Amaranth can be used in porridge, polenta and quick breads, as well as a number of other recipes. It contains all the essential amino acids, including lysine. Bob's Red Mill Amaranth is gluten-free and USDA organic.

BASIC COOKING INSTRUCTIONS: Bring 3 cups water to a boil in a pot. Add 1 cup amaranth. Cover, reduce heat and simmer until water is absorbed, about 20 minutes. Makes 4 servings (about 2 cups).
