Tapioca flour, also known as tapioca starch, is a slightly sweet flour that is especially good for thickening soups, sauces, dips, pie fillings and so much more. Finely Ground Tapioca Flour from Bob's Red Mill is also an excellent ingredient for gluten free baking. It lends a springy texture, promotes browning and makes crispy crusts. Bob's Red Mill products labeled Gluten Free are batch tested in our quality control laboratory using an ELISA Gluten Assay test to determine if a product is gluten free.

Since I am allergic to two "Gluten Free" staples - Potato Flour and Rice Flour, it is even more difficult for me. I have found that by making my own Gluten free "all-purpose" flour, using Sorghum Flour, Quinoa Flour, Guar Gum and either Tapioca Flour or Arrowroot, I can make some really nice, and satisfying baked goods. If you are "Gluten Free" try adding Bob's Red Mill Tapioca Flour to your baked goods, it gives them a nice texture. September 21, 2013
